Breakfast menu sections, decoded

The seven building blocks every breakfast menu is assembled from.

1. Beverages

Coffee (black, white, espresso, cappuccino), tea (regular, herbal, with lemon), fruit juices (orange, apple, grapefruit) and hot chocolate. Coffee is often the most important line on the whole menu — many guests decide where to eat breakfast based on it. Offer at least one juice and still water alongside the hot drinks.

2. Egg dishes

The workhorse section: boiled (soft, medium, hard), poached, scrambled, fried (sunny side up or turned over), omelets and frittatas. Eggs are cheap, fast and endlessly variable, which is why nearly every breakfast tradition centers them. One well-executed egg dish anchors a menu; three give it range.

3. Breads and pastries

Plain bread, toast, croissants, Danish pastries, muffins, bagels and brioche — with butter, jam, jelly, honey and marmalade. This is the backbone of the Continental style and the supporting act everywhere else. Freshness matters more here than anywhere: day-old pastry sinks a menu.

4. Cereals and porridge

Cold cereals (corn flakes, muesli, granola) served with milk, and hot porridge or oatmeal. The healthy menu's home turf. Oatmeal with fruit toppings bridges the gap between indulgent and virtuous and costs almost nothing to offer.

5. Meats and hearty items

Bacon, sausages, ham, black pudding, baked beans, hash browns and home fries. This section delivers the "full breakfast" feeling. Even menus that lead light usually keep one or two hearty items for the guests who woke up hungry.

6. Fruit and dairy

Fresh fruit (banana, papaya, melon, berries, pineapple), fruit salad, yogurt (plain or Greek) with granola. The color section — a menu without it looks beige and heavy. Fruit also does quiet work for dietary coverage: most of it is naturally vegan.

7. Sweet finish

Pancakes, waffles, French toast, cinnamon rolls, crêpes and banana bread. Technically optional, practically essential — the sweet item is what guests remember and photograph. One signature sweet beats three forgettable ones.
